There are many references to food and drink in early Irish literature. Honey seems to have been widely eaten and used in the making of mead. The old stories also contain many references to banquets, although these may well be greatly exaggerated and provide little insight to every diet. There are also many references to fulacht fiadh. These were sites for cooking deer, and consisted of holes in the ground which were filled with water. The meat was placed in the water and cooked by the introduction of hot stones. Many fulacht fiadh sites have been identified across the island of Ireland, and some of them appear to have been in use up to the 17th century.

Northern Ireland has been a major factor in Irish politics since the island of Ireland was divided between Northern Ireland and the twenty-six county southern state in 1920. The creation of Northern Ireland led to conflict between northern nationalists (mostly Catholic) who seek unification with the independent southern state and Unionists (mostly Protestant) who wish for Northern Ireland to remain within the United Kingdom. This conflict exploded into a violent conflict in the late sixties known as the 'Troubles' involving groups such as the Provisional IRA, loyalist paramilitaries, the police and the British army. In 1998, following a Provisional IRA cease-fire, the Good Friday Agreement was concluded and attempts began to be made to restore self-government to Northern Ireland on the basis of power sharing between the two communities. Violence has greatly decreased since the signing of the accord.

The state was neutral during World War II but offered some assistance to the Allies. In 1949 the state was declared to be a republic; since that time it has been commonly referred to as the "Republic of Ireland". The state was plagued by poverty and emigration until the 1990s. That decade saw the beginning of unprecedented economic success, in a phenomenon known as the "Celtic Tiger". By the early 2000s, it had become one of the richest countries (in terms of GDP per capita) in the European Union, moving from being a net recipient to a net contributor and from a population with net emigration to one with net immigration.

Under the Belfast Agreement (also known as the Good Friday Agreement) and Article 3 of the constitution a North-South Ministerial Council and six North-South Implementation Bodies coordinate activities and exercise a limited governmental role within certain policy areas across the whole island of Ireland. The Implementation Bodies have limited executive authority in six policy areas. Meetings of the Council take the form of meetings between ministers from both the Republic's Government and the Northern Ireland Executive.

Ireland is divided into four provinces: Connacht (or Connaught), Leinster, Munster and Ulster. These were further divided into 32 counties for administrative purposes. Six counties remain in the United Kingdom as Northern Ireland following Ireland's partition in 1922 (the remaining 26 forming present-day Republic of Ireland); these county boundaries no longer exist in Northern Ireland for administrative purposes, apart from Fermanagh. In the Republic, the county boundaries are still adhered to for local government, albeit with Tipperary and Dublin subdivided (some cities also have their own administrative regions). For election constituencies, some counties are merged or divided, but constitutionally the boundaries have to be observed. Across Ireland, the 32 counties are still used in sports and in some other cultural areas and retain a strong sense of local identity.

Political parties in Northern Ireland can be divided into three distinct categories: unionist parties, such as the Democratic Unionist Party, the Ulster Unionist Party, and other smaller parties such as the Progressive Unionist Party and the United Kingdom Unionist Party; nationalist parties, Sinn Féin and the Social Democratic and Labour Party (SDLP); and cross-community parties such as the Alliance Party and the Northern Ireland Women's Coalition.

The dialect of English spoken in Northern Ireland shows heavy influence by that of Scotland, thereby giving it a distinct accent compared to other forms of Hiberno-English, along with the use of such Scots words as wee for 'little' and aye for 'yes'. Some jocularly call this version of Hiberno-English phonetically by the name Norn Iron. There are supposedly some minute differences in pronunciation between Protestants and Catholics, the best known of which is the name of the letter h, which Protestants tend to pronounce as "aitch", as in British English, and Catholics tend to pronounce as "haitch", as in Hiberno-English. However, geography is a much more important determinant of dialect than ethnic background. English is by far the most widely spoken language in Northern Ireland.

Chinese and Urdu are also spoken by Northern Ireland's Asian communities. According to the most recent census returns, Chinese is now the second most widely spoken language, though the 8000-strong Chinese community — while often referred to as the "third largest" community in Northern Ireland — is tiny by international standards.

Executive authority is exercised by a cabinet known simply as the Government. The Government consists of the Taoiseach (prime minister), the Tánaiste (deputy prime minister) and up to thirteen other ministers. The Taoiseach is appointed by the President, after being designated by Dáil Éireann (the lower house of parliament). The remaining ministers are nominated by the Taoiseach and approved by the Dáil. The Government must enjoy the confidence of Dáil Éireann and, in the event that they cease to enjoy the support of the lower house, the Taoiseach must either resign or persuade the President to dissolve the Dáil, in which case a general election follows.

Many Irish urban centres developed as garrison towns during the years of British rule and this fact contributed towards their particular character. Belfast had its shipbuilding and a number of towns in Ulster had mechanised linen industries, but the majority of towns developed primarily as commercial and administrative centres. By the end of the 20th century, over 50% of the population lived in these urban areas.

A ring of coastal mountains surrounds low central plains. The highest peak is Carrauntuohill (Irish: Corrán Tuathail), which is 1041 m (3414 feet). The island is bisected by the River Shannon, at 113 km (70 mi) the longest river in Ireland or Britain. The island's lush vegetation, a product of its mild climate and frequent but soft rainfall, earns it the sobriquet "Emerald Isle".

The potato would appear to have been introduced into Ireland in the second half of the 17th century, initially as a garden crop. It eventually came to be the main food field crop of the tenant and labouring classes. As a food source, the potato is extremely efficient in terms of energy yielded per unit area of land.
